Bottega Stardust

Prosecco Doc Spumante Dry
Caratteristiche e processo produttivo: Bottega Stardust is a Prosecco DOC, obtained by the vinification of Glera grapes, grown on the Treviso hills. This area, close to the Venetian Prealps, has a perfect climate for this native grape variety. The wide temperature range stimulates an increased production of aromatic compounds, maintains a good level of acidity in the grape and improves the polyphenolic composition. In the vineyard where these grapes are grown, the ages of the vines vary. The very old vines, some up to 80 years old, only manage to produce a small number of grapes, however they accumulate a higher concentration of substances and noble compounds. The resulting wine is therefore of a higher quality.
Bouquet: Typical of Prosecco: fruity (apple, pear, peach, citrus) and floral (acacia, wisteria, lily of the valley and slight final hint of roses)
Taste: Harmonious, elegant, persistent, good balance between the rich texture and pleasant mineral notes

Il Vino dei Poeti Prosecco DOC

Prosecco Doc Spumante Brut
Characteristics and production process: The grapes are hand-picked and produced with a white vinification (must and skin are immediately separated). The second fermentation takes place in autoclave at a controlled temperature of 14-15° C. This process lasts quite a long time in order to maintain all the wine perfumes and obtain a fine perlage. The wine is then cold stabilized at -4° C for about a week, filtered and bottled.
Colour and appearance: light straw yellow, brilliant, rich and persistent foam, fine perlage.
Bouquet: fruity and flowery with intense scents of Golden apple and exotic fruit
Taste: Dry, lightly alcoholic, fragrant, fresh, well balanced with intense fruity scents

Pinot Nero Spumante Brut
Characteristics and production process: The grapes are hand-picked in wooden cases and produced with a white vinification (must and skin are immediately separated). Fermentation takes place at a controlled temperature of 18° C. The wine obtained is then submitted to the sparkling process in autoclave at 14°-15° C for a minimum of 3 months and daily slightly shaked. It is then cold stabilized at - 5° C for a week, then filtered and bottled.

Bouquet: Clear, characteristic, light fragrance of bread crust, delicate, pleasant and elegant

Prosecco Doc Spumante Extra Dry

Characteristics and production process: The grapes are generally hand picked from mid-September in the vineyards cultivated with the Sylvoz growing system, which is typical of this zone. The grapes are pressed and then vinified in white, where the must is separated from the skins. The juice obtained is put in special steel containers, where it is fermented with the addition of selected yeasts. The second fermentation then starts according to the Charmat method, at a controlled temperature of 15° C in order to preserve the typical fragrances of the original grapes. It lasts nearly 40 days. During this period carbon dioxide is released naturally so that the wine becomes sparkling. The wine is then cold stabilized, filtered and bottled. The sugar content of this wine is higher than the brut version.
